Instructions:


Soak the dried chillies in hot water for 15–20 minutes until soft. Remove stems and seeds for a milder paste.


Drain the chillies and place them in a blender or food processor.


Add garlic, shallot, oil, vinegar (or lime), sugar, and a pinch of salt.


Blend until smooth, adding a splash of water if needed to loosen it.


Taste and adjust seasoning. Add soy/fish sauce, more vinegar, or sugar depending on your preference.


Transfer to a jar and store in the fridge. It keeps for up to 1–2 weeks. For longer storage, freeze in small portions.
